Dusty fusty nuts no more!
Shopping Advice From the Epicurious Test Kitchen Buy Nuts (and Nut-Based Treats) Online and Never Eat a Stale Nut Again
I consider myself to be a pretty astute buyer of internet nuts, nut butters, and seeds. I wish I could say this was brought about by pure, sheer love for almond butter and tahini, but negativity is the ultimate motivator: Few things bum me out in the kitchen more than a lackluster or rancid nut. And, unlike when I've blindly trusted the online grocery gods with produce or fish, I've found nuts bought online are very often fresher and of better quality than nuts purchased from the corner store.
In the process of making this switch, I've ordered some truly terrible nuts. I've been duped by more than one innocent-seeming tub of cashews, and smeared expensive yet still very stale almond butter on more than one apple. Here's my short list of the nuts that haven't let me down, for all your spreading, snacking, and milking needs. Plus, some nut-filled treats I love to stock up on as well.
As far as tahini goes, I've yet to taste a single spread stateside that rivals Soom. Unlike so many jars that leave you with a dense silt-like layer topped with a slick of oil to mix, Soom barely separates. It has a fresh, delicate flavor and a silky texture.
If you have ample freezer space or you're a regular almond milk–maker, this bulk bag makes sense. Wild Soil steam-pasteurizes its nuts and doesn't use Category 1 pesticides, but it's the delicate flavor and crisp bite that sealed the deal for me. I'm on bag four.
I go to New York–based Seed + Mill for all things sesame. The pistachio halva is probably my favorite: It has a creamy texture and flakes into perfect nibbles. According to Seed + Mill, you don't need to store this halva in your fridge (and honestly, I doubt it would last long enough to go rancid—it's too good).
