Hello Friend! What's up on this fine winter day? Just thinking about a garden and spring time chicks around here. In the kitchen, I've been working on several new recipes that aren't quite ready for prime time yet, but will be soon. My new Chicken Satay recipe is WONDERFUL (even if you aren't a fan of asian cooking). I took great liberties with a basic recipe and I'm thinking it might not even be a satay anymore, but oh well, it is GOOD! Hopefully you'll be seeing that next week. I've published an entire line of infused waters since that seems to be all the rage. You know, you can make these yourself at home for little to no cost and near zero environmental impact (no aluminum can), plus, it tastes better if you ask me. You can find all of those here. This isn't a fun tip but it is an honest tip. I'm giving you this tip because I made a bunch of mistakes making a recipe this week and the end result was really not very good. What happened? Must have been a difficult recipe, right? I mean, here I am, I WRITE recipes for a living, how could I cook one that didn't come out right? Here's what happened and it wasn't the recipes' fault... I looked at the ingredients and laid those out on the counter. I briefly scanned over the instructions and then started in on the recipe. While making the recipe, I referred back to the printed recipe only a couple of times. I MISSED many of the instructions in the recipe! I mixed things at the wrong time, I added ingredients at the wrong time and then I accidentally added some of the sauce ingredients to the main part. What a mess. Why am I sharing all of this? Because that is one of the most important cooking tips of all! Read the recipe all the way through a first time. Then read it again and imagine yourself doing each step (no, I'm not kidding). Keep the recipe handy while you are cooking so that you can refer back to it often. Have all of your ingredients measured out and ready to go before you start. You will be well on your way to cooking success by following these simple tips FIRST. Don't be like me and just try to wing your way through, even if you know how to cook and feel fairly confident. ______________________ THREE LITTLE THINGS I'm trying to be more thankful for the little things in my day to day life and I thought if I share those things here, it might help you to think about those little things too.
__________________ A Final Thought I've been thinking about you a lot lately. Some have reached out to me with concerns over being tired of cooking day after day. Some have reached out to say, "I have never cooked a single thing for myself and I am not sure where to start". What I have to say is, if you have to serve bologna sandwiches for supper, it's ok. Sometimes that is simply where we are. No one is blaming you. You are fine just as you are. If you want to learn to cook something, that is fine too. I'm here to help and happy to do so. We have to help each other during times like these and this is one area that I can help with.
