Black Bean Quinoa Enchilada Bake- our favorite meatless meal! You have to try this one!
Chickpea Avocado Feta Salad- so easy! I love making this for lunch! I actually made it yesterday and I can't wait for leftovers today:)
Blueberry Baked Oatmeal- reheat and eat during the week!
Chocolate Peanut Butter Energy Balls- I love having these in the fridge at ALL times for a healthy-ish treat!
