I don't know about you, but after the holidays, I find myself craving simple, fresh meals. This entire batch of Instant Pot Rice Pilaf has just 1 tablespoon of butter, but it's packed with flavor and has a beautiful golden color. It's the perfect easy-to-make, healthy side dish.
Rice is one of my favorite dishes to make in the Instant Pot. This recipe takes simple white rice and soaks it in a rich saffron broth for gorgeous color and flavor, plus crunchy, nutty almonds for garnish.

REMINDER: Sign Up for Our Your Instant Pot, Simplified class
We heard from a number of you who wanted us to teach a free class for beginners, so we got one on our schedule.
We'd love to have you sign up for the free class here!
We're going to teach the same class three times.
- January 6th at 2:00pm Mountain

Hopefully one of those will work for you—if not, we'll have a replay available a few hours after the class ends. If you sign up for a time, you'll automatically be sent a replay
If you're thinking about signing up for our Instant Pot beginners course when it becomes available next week, we'll be giving some details about it at the end of this class. It's a great chance to get a sneak peak at our teaching style and the things we'll be covering.

Best of 2020
(It almost feels strange to write that π)
With all of the craziness prepping for our upcoming Instant Pot course and our Free Beginners Instant Pot class, I didn't have enough time to compile our top 10 posts of the year.
However, the top 10 hasn't changed much since last year.
Everyone keeps coming back to Pulled Pork, Beef & Broccoli, and Honey Sesame Chicken—this is their 5th year as our top recipes.
(We're glad you all still love them as much as we do!)
New to the top 10 this year is our 15 Bean Soup and our Roasted Red Potatoes.
Add one of these favorites to your menu this week!
