Somewhere along the way, pumpkin became a Whole Big Thing.
I never jumped on that particular bandwagon.
I've never had a pumpkin spiced latte. I don't burn pumpkin-scented candles.
But I do crave it in these two pumpkin recipes every fall:
Pumpkin Chocolate Chip Muffins
Big, bakery-style domed tops. Mini chocolate chips in every bite. Made with a mix of whole wheat flour and ground flaxseed, so they're a little more wholesome than they look, but still completely delicious.
One reviewer said, "It’s giving fall vibes and I’m here for it! Dense yet moist, spiced perfectly, and packed full of fiber. These have been my go-to after a chilly fall morning run. Love these!"
Pumpkin Protein Waffles
Fifteen grams of protein per serving with no protein powder. Just oats, eggs, cottage cheese, pumpkin puree, and a little maple syrup blended together and cooked in a waffle iron. They taste like fall and keep you full for hours.
One reviewer said, "My whole family loved these waffles. They fed me and my two small kids, though I’ll have to make double if my husband wanders in when we make these next time. Great flavor, stayed moist, and loved the pumpkin note!"
Warmly,
Sally
P.S. If you're skeptical about the cottage cheese in the waffles, I promise you cannot taste it. It just makes them creamy and protein-packed.
