While I have always loved a good kebab or steak or chicken on my plate, it's the so-called sides, or vegetables and vegetarian dishes, that I gravitate to most. I think this is because of the dazzling flavor parade that is the Lebanese way with vegetarian recipes. We coax great taste by amplifying the goodness of the produce or taking humble grains and turning them into that which satisfies and nourishes.
Many of us will embark on Lent starting this week, a season which is noted in a great many of the older Lebanese cookbooks with recipe ideas for meatless dishes for fasting from meat at least on Fridays these weeks.
