What to Cook this Week
Happy weekend!
My birthday is technically next week, but we're celebrating this weekend. Miguel and I went out to dinner last night, and tonight we're going over to my moms house where she's making dinner and my favorite apple crisp. YUM!
As always, I'm sharing my newest recipes with you, and a few extras. I hope you have a lovely weekend!
Easy Chicken Stir Fry is a quick and healthy weeknight meal! Made with chicken, frozen stir fry vegetables and a flavorful sauce, the entire dish is ready in under 20 minutes! Couldn't be easier to make and clean up is a breeze!
Easy Grain-Free Granola is made with nuts, seeds and nut butter. It's crunchy, sweet, full of healthy fats, and delicious on its own or on top of yogurt. Also makes for an amazing on-the-go snack!
French Onion Chicken tastes like your favorite french onion soup, but in chicken form. The chicken is cooked completely in a skillet, then topped with caramelized onions and cheese, making it a cozy, flavorful meal. YUM!
Savory Mashed Sweet Potatoes
Savory Mashed Sweet Potatoes give traditional mashed potatoes a run for their money! They're made with only four ingredients and are super creamy and Paleo+Whole30-approved. Perfect for the upcoming holiday season!
Cream of Mushroom Pork Chops
These Cream of Mushroom Pork Chops are pan-seared and ready in about 8 minutes, then topped with a dairy-free cream of mushroom sauce, making this recipe Paleo/Whole30, too! A "fancy" dinner that's quite easy to prepare but tastes exquisite!
This Chai Spice Vegan Pear Pie combines the best of both worlds: chai spices with caramelized pears, all packed into a flakey, buttery vegan pie crust. Nothing better than a fruit pie with a scoop of whipped cream or ice cream!
