They put sugar in bone broth? 😧

 

Hi There,

 

The other day I was at the store, and I picked up a package of broth - you know, just to check the ingredient list. 

 

What a disappointment. It contained sugar, yeast extract, and "natural flavorings." I couldn't even find bones listed anywhere in the ingredients. Yuck.

 

But, that's what happens. As soon as something becomes popular, people will try to capitalize on the trend by producing some pretty inferior products. 

 

And while I think your best bet is just to make your own at home, It's not always feasible.  

 

Maybe you're overwhelmed, or just cooking for one, or plain forgot, right? I mean, I even wrote a whole book on the subject, and I still pop open a package of bone broth in a pinch.

 

So, if you can't make your own, here's what to look for:

  • Actual bones in the ingredient list. You'd be surprised by how many "bone" broths aren't made with bones at all. 
  • Vegetables and spices. In addition to bones, you'll also find various vegetables and spices such as carrot, celery, and bay leaf or peppercorns. Look for these, and skip the ones with amorphous ingredients such as "natural flavorings" or "yeast extract."
  • Adequate protein. The hallmark of good broth is its protein content, which comes from collagen and gelatin.  Good-quality broths will have roughly 7-10 grams of protein per serving.
  • Organic and other certifications. Look for broths that include organic ingredients. Ideally, the bones should come from free-range chickens or grass-fed beef, too.
  • Nothing else. Skip the broths that list sugar, yeast extracts, starches, gums and other additives.

While I usually DIY my broth, one store-bought option I use is Kettle + Fire. I tuck it in the pantry for when I need it, and it's pretty close to what I make at home (organic ingredients, slow-simmered etc.)
