Happy long weekend! Are you doing anything fun?
We are still laying low at home, but at least we have lots of football to watch. I think we will make these to snack on.

Beef and Broccoli- You will love this 30-minute meal!
Lentil Soup- A classic and so good with crusty bread or our easy biscuits.
Chicken Parmesan Baked Pasta- easy, cheesy, and comforting!
Avocado Egg Salad- I've been loving this for a quick and healthy lunch! Eat on bread, rice cakes, greens, or with crackers!
Roasted Vegetables- I share all of my tips, tricks, and ways to use roasted veggies during the week. Great for meal prepping and roasting brings out the BEST flavor!
Peanut Butter Banana Smoothie- great for breakfast or a snack!
Chewy Oatmeal Raisin Cookies- if you don't like raisins in your cookies, you can do chocolate chips:)
