Perfect Coconut Rice

Making good stovetop rice has always troubled me. I hate the process of rinsing, which I have read over the years makes all the difference.

I recently discovered — no surprise — it does!

Earlier this week I timed myself rinsing 1 cup of rice: filling a large bowl with water, swooshing the rice around in it, draining it, and repeating the process four times.

It took less than 2 minutes total. The water didn't run completely clear in the end, but it was clear enough, and boy did it work. When I lifted the lid off my pot to find glistening, fluffy, perfectly cooked rice, I nearly cried. Who knew it could be so easy?
