Here's your Meal Plan for the week! 😍

Hello again!

I hope this email finds you well, and that you're sipping on something warm & comforting like I am. I'm still obsessed with my London Fog over here.

It was a big week here in the Gilmore home, because we got a new pet! My kids talked us into getting a hamster, and they've named her Tweet. (Yes, like what a bird says. LOL) I've never owned a pet hamster before, but I did grow up with a pet rat when I was younger, and she was my best little companion... as strange as that might sound. So, I hope that Tweet will have an equally great relationship with my kids, as we all get to know each other.

In other news, there are two new cooking tutorials up on my YouTube channel this week!

You can watch me make the Best Granola Bars, or Slow Cooker Chicken Tacos, which have a sneaky veggie hiding inside. I hope these video tutorials are helpful, because I'm still learning what I'm doing when it comes to filming & editing videos by myself. It's so much harder than it looks, but practice makes perfect, right?



Here's What You Missed

If you haven't visited the website this week, here's what you missed:

Chocolate Energy Balls. This recipe has been on my website for nearly 10 years, but it got a much-needed update this week! These little balls taste like a brownie bite, and they are 100% fruit-sweetened.

The Best Homemade Granola Bars. Not an exaggeration! My kids are obsessed with these, and I love how you can customize the toppings. All you need is 4 basic ingredients, plus any add-ins you like!

Rosemary Tea. Here's a great way to sneak more rosemary into your life. Research has shown that rosemary extract may help with mood, concentration, anxiety & depression, and sleep quality, and it has antimicrobial properties that may help fight infections, too. (Links to the research in this post!) I'm trying to incorporate more rosemary into the winter months, so I hope you'll enjoy this tea, too.

Healthy Slow Cooker Chicken Tacos. One of the biggest requests in my end-of-the-year survey was that you wanted to see more meat recipes. This is an easy one to make on a busy weeknight, and I've made it healthier by adding a sneaky veggie into the taco filling! My husband didn't even notice, so trust me when I say, it really is sneaky.


Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!

Sunday: Slow Cooker Chicken Tacos. I prefer to use my slow cooker when I'm home on the weekends, so this is an easy, hands-off dinner. The leftovers are great over a burrito bowl the next day, too! For a vegetarian taco filling, try my Jackfruit Tacos or Vegan Tacos.

Monday: Pesto Pasta Salad. I could eat this recipe every single week and never get sick of it. If you haven't tried it yet, this should be your week! The leftovers make an easy packed lunch. This recipe is naturally vegan, but you can add cheese to it, if you want to.

Tuesday: Crustless Quiche. If you love having breakfast for dinner, this recipe is for you! It gets "bulked up" with spaghetti squash, so you get a sneaky serving of veggies in each bite!

Wednesday: Cauliflower Steaks with Chimichurri Sauce. I could drizzle this sauce on everything, but the cauliflower steaks are extra delicious this way! Serve them with mashed potatoes or a side of Quinoa & Black Bean Salad for a complete meal.

Thursday: Lentil Potluck Salad. This recipe makes enough to feed an army, which is great if you want some easy lunches heading into the weekend. I love this satisfying salad, because it's filling, and has different flavors in each bite.

Friday: Easy Coconut Curry. This is the easiest dinner to make, when you want something comforting and flavorful, but you don't want to spend a lot of time in the kitchen. Serve it over rice or quinoa, for extra protein.

Saturday: Day off from cooking! (Leftovers or take-out)
