I'm so excited to share this simple and delicious salad with you today.The pops of edamame combined with the softness of lentils, toasty almonds, sharp red onion, and a tangy spiced lemon dressing... it's my go-to for lunch meal prep these days.I mostly appreciate how quick this salad is to make. The lentils take about 15 minutes of simmering time. During that time, you can chop the red onions and parsley and whisk up the dressing.
