Sorry that I missed you with a new recipe last week! Hoping that I can make it up to you with this simple one pot option. It's saucy and hearty, but still vibrant with lots of bright flavour, fresh herbs, and it also uses a full pound of cherry tomatoes!The caramelization of sliced fennel takes a good 20 minutes, but otherwise this meal is pretty easy. It's ideally served with plenty of crusty sourdough bread on the side for dipping and scooping.This is a lovely vegan meal for that abundant late summer season.
