Have your dinner plans ever fallen through? You may have forgotten to thaw the meat, the basketball game ran late, or there was an accident on your way home.
If there's one truth about meal planning, it's that at some point in time, your plan will fail. Sometimes it's your fault, and sometimes it's not. But if we're going to stick to our clean eating goals, we must plan for the unexpected… or rather, the expected!
Having a list of pantry meals in your back pocket can be a lifesaver.
A pantry meal…
- Is something you can make with what you ordinarily have on hand.
- Usually relies on items from the pantry or fridge, and not the freezer (unless it can be thawed in under 5 minutes, like pre-cooked rice or quinoa)
- Does NOT require a last-minute trip to the store, since those tend to cost more money and waste time.
Now when you're dealing with just your family, a pantry meal could easily be as basic as peanut butter and jelly sandwiches with apples and carrots.
However, sometimes our dinner plans involve our spouse's boss or the pastor and his family. While you CAN offer them PBJs, I'm not sure that's the wisest choice.
I have a challenge for you: Write down 3 dinners that your family loves. These meals must meet the three criteria above AND they must be suitable for hosting the boss or other important people for dinner.
When you're in the midst of stressing about forgetting to thaw the chicken, you won't think of anything. You're going to draw a blank and call for take-out. That's why having this list ready now, is a game-changer!
Now I know that coming up with ideas is half the battle, and that's why I'm including three easy pantry meals.
