It's the weekend!
This weekend is kind of exciting because Miguel's family is here visiting. It was a somewhat last minute decision, but we're happy to host. We don't have a ton of plans other than going to brunch, but they're bringing their new puppy and I can't wait to snuggle him. As always, sharing my most recent recipes with you all, along with a few of my favorites.
Happy cooking!
Healthy Sweet and Sour Chicken
Skip the takeout and make this healthy sweet and sour chicken from the comfort of your kitchen instead! It's a simple 30-minute copycat recipe made with crispy chicken, peppers, and pineapple tossed in a sticky 4-ingredient sauce. One of my absolute favorite meals at the moment!
This recipe is such a perfect lunch or lite dinner! This protein-packed Zesty Quinoa Salad is a party for your taste buds! It's the best summer side dish or healthy lunch made with quinoa, veggies, nuts, avocado, feta, and herbs dressed in a sweet and savory vinaigrette.
Healthy Broccoli Cheddar Soup
Now this one I'm super excited about! This one-pot Healthy Broccoli Cheddar Soup puts a nourishing spin on a classic comfort food. Each bite is cheesy and luxurious, loaded with veggies, and deceptively nutritious!
Now this recipe has become a new go-to for me! This quick and healthy Adrenal Cocktail recipe is the perfect afternoon pick-me-up! Made with three simple ingredients, it's a great alternative to a second cup of coffee.
Cottage Cheese Chicken Salad
Another fave for lunches at the moment! This cottage cheese chicken salad subs the usual mayonnaise for cottage cheese, making for a healthier version of the traditional recipe. It's loaded with protein and easy to meal prep, too!
I've been so into scones recently for breakfasts and brunches and these easy Vegan Chocolate Chip Scones are perfect! They are light, satisfying, and delicious for breakfast, brunch, or dessert. Whip up a batch to serve with afternoon tea or a hot mug of coffee for a comforting treat both kids and adults will enjoy.
If you make any of these recipes, be sure to leave a comment and star rating on the blog and let me know what you think – I love hearing from you!
