This recipe is a DIVA in the best way! It's so gorgeous and fun to eat with all of its layers. Salty cotija cheese, a sour cream drizzle, fresh cilantro, and those crispy corn fritters (seriously so good) on top of a very simple pinto bean soup called Sopa Tarasca. The soup itself is smooth and creamy, so any leftovers can be repurposed for a taco simmer sauce or sauce for enchiladas!
I was first introduced to Sopa Tarasca by this video on YouTube from Pati Jinich! This soup originated in the Michoacán state of Mexico and was given the name in honor of the indigenous peoples of that area, the Purépechas or Tarascos. This version modifies the ingredients to what is more readily available for me and, of course, adds the corn fritters!

Sopa Tarasca (Pinto Bean Soup) with Jalapeño Corn Fritters
This is like a big ol' hug in a bowl! It's a creamy, silky Mexican-inspired soup made with pinto beans, warm chili spices, and whole tomatoes. And you NEED a big pile of the jalapeño corn fritters on top. Drooling over this one!
Tacos are always on the brain! We love them in almost any variation, but we especially love them when a tender chicken and pinto bean red chile saucy sensation is bursting out of lightly fried corn tortillas and there's a quick creamy corn salsa piled on top. Make these ASAP!
There is no burrito, rice bowl, taco, quesadilla, breakfast skillet, or nacho platter that does not benefit in some way from a heap of spicy, saucy sofritas. Think spicy peppers, garlic, tomatoes, and fresh cilantro in a flavorful simmer sauce. So perfect!
Aside from the obvious reasons to like these (golden crispy tortilla, super-satisfying black bean filling, brought together with a cool and creamy dipping sauce, gahh), this is one of my all-time favorite easy recipes because, well, it's EASY. Perfect for a quick weeknight meal!
These are the BEST! Chipotle sweet potato skins filled to the brim with roasted corn, black beans, fresh cilantro, sweet potato mash, a kick of spicy chipotle, and a handful of melted cheese. YUMMM!
