Veganuary is drawing to a close, so for this, my last Veganuary post of the year, I'm giving you a really simple vegan food hack, that I hope you'll appreciate as much as I do. Much like my quick and easy vegan mayonnaise, this recipe for vegan 'parmesan' cheese is so very useful. It works a treat with vegan pasta dishes as well as many others. There's been a lot of discussion about vegan eating and vegan living in the press recently. There are no easy answers. I just try to cut my dairy intake year on year. I'm sort of sad and sort of glad my annual month of vegan healthy eating is nearly over. I've done lots of experimenting and have come up with several new recipes. I've shed a few pounds and feel healthier than I did at the start of the month. But I'm missing cheese and butter. And indulgence in general. Recently, I've been thinking rather a lot about these chocolate macaroons.
For the next few days, however, I shall continue to relish all the delicious vegan food I've been cooking. I might even make these carrot falafel today. Please do let me know if you make any of my recipes and don't forget to rate them. Questions or feedback on the blog posts are always appreciated.
