Yes, it's me again. I know it's only been two days, but I reckoned last week's recipe was too good to miss. If you like carrot cake, you'll adore this recipe. Following a plant-based diet? Taking part in Veganuary? Trying for a healthy January? No problem, you'll find this healthy (ish) vegan carrot cake is a dream come true. It's lip-smacking delicious and easy to make too. Instead of the classic cream cheese icing, I've covered mine with one made from cashew nuts. Need I say more? Well I'm not going to, except to leave you with this thought.
