The 5-Day Winter Reset is here! ❄

Hello and Happy New Year!

I hope you're off to a great year so far, and that you're warm and cozy wherever you are. We had a BIG snow day here in the Midwest yesterday, and my kids were thrilled! It really feels like winter over here now.

And speaking of... the 5-Day Winter Reset is finally ready for you! All of the recipes use seasonal ingredients, and they are designed to help minimize food waste, so you'll make the most of your fresh produce.

For example, if I ask you to use half of a red onion, or a half head of cabbage in one recipe, you can be sure that I have a plan for the other half in another recipe, so you won't be left with random veggies in your fridge! This will help you streamline your budget and shopping list.

Here's What You Missed

I was busy polishing-up the Winter Reset this week, but I did manage to post one new recipe this past week, and I have lots more planned for January, so stay tuned!

Peanut Butter Overnight Oats. This make-ahead breakfast takes just minutes to assemble and tastes amazing! It's lightly sweet, and tastes much more decadent than you'd expect. Try it with almond butter or sunflower butter, if you'd like, too!


Dinner Ideas for the Week

Need some dinner inspiration? Here are some delicious ideas to help!

Sunday: Easy Chicken Burgers. Many of you mentioned you'd like to see more meat entrees on my website in my Reader Survey last week, so I wanted to make sure you didn't miss these! They are super-simple and easy to prepare, and pack 20 grams of protein per patty. If you practice food combining, enjoy them on a lettuce wrap with your favorite toppings. (If you're vegetarian, check out the other veggie burger recipes on my website!)

Monday: Cheesy Spaghetti Squash Casserole. This recipe always reminds me of my mom's cheesy hash brown casserole that she makes around the holidays! I like to serve it with a side salad, like my favorite beet & goat cheese salad, to make it a meal.

Tuesday: Quinoa Stuffed Peppers. Here's a vegetarian take on stuffed peppers, with plenty of plant-based protein in each bite!

Wednesday: Easy Lentil, Sweet Potato & Coconut Curry. This is an oldie, but a goodie! Lentils and sweet potatoes cook in a mild curry sauce, which you can enjoy as a stew, or serve over rice.

Thursday: Vegan Tuscan Pumpkin Sauce. If you're not burnt-out on pumpkin yet, be sure to try this sauce over your favorite pasta. You'll want to lick the bowl clean!

Friday: Pizza Stir Fry. This is my favorite lazy & healthy way to enjoy the flavors of pizza, without actually going through the effort of making a crust.

Saturday: Day off from cooking! (Leftovers or take-out)
