Just plugging along right through January here and we were reminded of another one of our all-time fave plant-powered recipes, Cauliflower Fried Rice.
You might be like, "Why not just rice?" And we'd be like, "Because! The whole thing is so nutritious and delicious, and we swear it's a 15-minute endeavor that you will not regret."
Seriously, tons of fresh veggies, a little tofu for some extra protein if you're feeling it, there are sesame or hoisin drizzles available if you'd like, everything is just real A+ here.
