Start the year right with better-for-you recipes December can easily become a month of overindulgence no matter how hard we try to keep things in balance. If you're anything like me, you're probably craving some lighter and brighter flavors right about now. This week I have five better-for-you dishes to start the year right. They're all veggie-packed, filled with bright flavors, and adorned with vivid colors that will please both your eyes and stomach. They're also hearty and satisfying—I won't let anyone ever go hungry! Curried Shrimp, Roasted Vegetable, and Almond Soup Soups are a favorite of mine, particularly during cold winter months. They're easy to make, comforting, and filling. They can be a great lunch, a nice starter for dinner, or they can be the main event. This dairy-free Curried Shrimp, Roasted Vegetable, and Almond Soup features a richly flavored, silky broth, that's also surprisingly light. The secret is to use almond beverage instead of coconut milk. Roasting the veggies also adds extra flavor depth and more texture. Add noodles to your bowls to make this hearty soup a complete meal. If you did, you would miss the opportunity to try this Lemony Broiled Cauliflower Pasta, which is light, bright, and offers wonderful layers of flavor and texture. Broiled cauliflower is the star here and it's one of my favorite ingredients to add to so many dishes. It's a perfect accompaniment for pasta. Topped with some grated Pecorino Romano, fresh basil, and crunchy toasted almonds, this pasta dish is fresh and perfectly suited for a better-for-you January! | | Meatballs are always a family favorite and these Baked Turkey Meatballs are a great one to add to your repertoire. Kids love them and it's so easy to make them a little healthier by using a lean protein like turkey. Baking them helps lighten them up but, the real secret is the zucchini that's incorporated into the mixture. It helps keep things moist and is a sneaky way to add in some extra veggies! | | Easy, Dairy-Free Lemon Bars | | | I adore lemon bars and I think these are a perfect January dessert. They're really easy and, with the use of a few clever ingredients you can make these dairy-free as well as a better-for-you dessert. Don't worry, they'll still have that puckery, sweet-tart taste of the original. This is a treat you must make during citrus season (which is right now!). | | Make the most of citrus season! | | | Enjoy citrus season to its fullest with my Simply Citrus Cookbook!
