Another week has come and gone, did anyone struggle with the midweek dinner slump like we did this week? Some nights (far more often than I should admit) dinner time seems to sneak up on me. Mornings are always crazy as I get the kids off to school. I then attempt to catch up on my house, get some work done, run errands, you know the routine. Before I know it my kids are getting home, and in what feels like 2 seconds it is dinner time. The evenings when I haven't prepared enough, and really don't want to run to yet another drive-thru, I oftentimes turn to my pressure cooker. In a matter of minutes I can throw in all of the ingredients, let it do its thing, and dinner is ready before we rush off to the next activity. It's truly a game-changer.
