Dear reader,
My mind feels numb and my heart breaks more each day as I continue to process last week's domestic terrorist attack on the capital.
I feel confused, angry, sad, and scared, yet grateful for the heroes that were there that day. Specifically Eugene Goodman, a Capital Police Officer, who, alone, led rioters away from the unprotected Senate chamber where lawmakers were still inside.
Representative Lisa Blunt Rochester from Delaware who attempted to hand out masks to her colleagues while they were gathered together in close quarters waiting out the attack.
And Brian Sicknick, another member of Capital Police, who died from the injuries he suffered while fighting off the attackers.
As a reminder, I denounce racism, anti-semitism, white supremacy, hate speech, and incitements of violence.
To be honest, it feels inappropriate doing my job at times like these. Though, from conversations I had with many of you last year, sometimes we need little slivers of normalcy when the world feels like it has been flipped upside down. Certainly not to deny or ignore what's happening, but to help fuel us forward and through it.
Over the past week our family has ordered way more take out than usual. Cooking - when we're following the news, trying to talk to our children about what's happening, and processing it ourselves - has been the last thing on our minds. If you find yourself in the same boat, today I'm sharing 3 comforting yet quick and easy recipes you can make in 30 minutes or less.
That said, don't forget that buttered noodles and baby carrots definitely counts as a meal. π
