This is an excellent bowl-style meal, and all the toppings can be customized and added by each person. We usually serve it over rice (it's delicious with cilantro lime rice, so plan accordingly to make extra if making it for this recipe and the Hawaiian chicken).
These kebabs are simple but super tasty. They're really great served with summer sides for a BBQ, but they make a great weeknight dinner, too. Serve them with smashed potatoes and fresh fruit/veggies.
This would be an excellent side dish for those beef kebabs, the Hawaiian chicken or the salmon! It can be kept warm in a slow cooker for several hours.

Another great way to use up zucchini - this cake is incredible! I don't get fancy and frost it - instead, I whip heavy cream with a bit of powdered sugar and cocoa powder and dollop the chocolate whipped cream on servings of the cake.
