I’ll admit it…
Steak tartare looked intimidating to me too, until I watched it being prepared tableside at a steakhouse during my trip to Colombia.
Seeing how simple it was inspired me to recreate it at home, and now I can’t believe how approachable it actually is.

It originally wasn't called "tartare" at all, it was known as "Steak Γ l'AmΓ©ricaine" (American-style steak)! When the dish first became wildly popular in French bistros in the early 20th century, it was simply raw minced beef served with an egg yolk and capers. It only earned the name "Steak Tartare" later on because a popular variation of the dish was served alongside tartar sauce. Over time, the name of the side sauce completely took over the identity of the dish itself.
