Friends, hello! About this time last summer, I shared a "recipe" for a very simple pasta salad: rotini + ciliegine mozzarella + cherry tomatoes + pesto. It takes no time to throw together, and everyone loves it. Last weekend, while visiting my sister for a small family reunion, she made the same salad but swapped in tortellini for the rotini. I hadn't eaten tortellini in ages, and I had forgotten how much I love its firm texture and flavor. Again, everyone raved. This is such a great one to turn to when you're pressed for time but need something to bring to a BBQ or potluck. Ready for it? Gather your ingredients: two pounds of frozen tortellini, 12 ounces of tomatoes, 8 ounces of ciliegine mozzarella, and prepared pesto (for two pounds of tortellini, I used a 13-ounce jar of pesto... you can add to taste).
Boil the tortellini for 3 minutes (or as directed) in well-salted water. Drain, rinse under cold water, and pat dry.
While it boils, halve the tomatoes and mozzarella balls:
Place the tortellini, tomatoes, and mozzarella in a large bowl and toss with pesto to taste.
