Welcome to Day 3 of the Sourdough Starter from Scratch Challenge! Today is an exciting day because you should be seeing real signs of fermentation — bubbles! — and your mixture may feel lighter than it did 24 hours ago. Your job today is twofold: first, feed it with fresh flour and water (128 grams of each); second, monitor its progress. Here's your first video of the day: If your starter doubles within the next 8 to 10 hours, feed it again. Here's your second video of the day: And if your starter doubles again, you can make an offshoot. Here's your third video of the day: Note: Do not despair if your starter is not doubling!
