First of all, thank you. I sent out an email on Friday about what's happening here in our home state of Minnesota, because it's hard for us to think about anything else right now. I was not expecting to hear back from so many of you from all over the US (and world) with messages of love and support. Thank you.
We gathered with some neighbors this weekend, of differing beliefs and voting histories, to pray and sing. We heard church leaders speak about ways to get involved with support for local families. And this weekend, for the first time ever, I called my Senate representatives to voice what it is that I value and want to see happen here in our city and with our government. It took me five minutes. If this is on your heart - you can do it, and now is a really good time.
Thank you for being a thoughtful, supportive, and caring community of people. I appreciate you guys.
I'm here this week to humbly share a new salmon recipe that I've been making. We've been really enjoying this one in our family lately.
Bjork says it's the best salmon he's ever had. I had to ask him, wait - are just just saying that so I can use that quote? And he said, no - really, the best I've ever had.
You get big chunks of smoky-sweet salmon, nestled into rice and some garlicky aji verde, topped with a juicy, colorful orange salady salsa on top. It is a total showstopper meal that immediately earned a place in the "favorite salmon recipes" category for our family.
One of my daughters approved of the salmon and green sauce, one of my daughters went back for seconds on the complete bowl, and both Bjork and I commented throughout the whole meal about how much we loved the flavors and textures.
Here's me standing in my kitchen just eating the orange salsa right out of the bowl. It's so good.
This is vibrant and fresh and bright, which is something I've been needing. Hope it's a ray of sunshine for you, too!
