| Hello reader, I hope this week has been kind to you. January here in Wiltshire has been relentlessly grey with rain-soaked days, low skies and flooding. So this week, I've turned deliberately towards the light. I've shaken my fist at the gloom and brightened the kitchen with seasonal citrus. Vivid colour on the counter, sharp zest on my fingers, and a bowl full of clementine sunshine! Whole Orange CakeMade using the entire fruit, peel and all, this cake is incredibly fragrant, gently bittersweet and deeply comforting. It's simple to make, keeps beautifully, and feels just right with a cup of tea, or a scoop of ice cream, on a grey afternoon. It is, of course, vegan and it is also deliciously gluten free.
