I've got a time-sensitive work project to wrap up in the next day or two, so I'm taking a pause from weekend reading this afternoon.
For now, I wanted to say that I'm grateful for the positive feedback that I've gotten on the vegan tuna that I posted a couple weeks ago. So glad it's been a hit with some readers. If you're looking for an easy, picnic-friendly, summery lunch, it's worth a try.
Also, with limited time for my meal prep this weekend, I made a batch of these trusty slow cooker black beans and was reminded of how economical and useful they are. I froze half, and I'm super grateful to have the other half for use in bowls, tacos, and breakfast burritos this coming week.
