Last Week....

Scotch Broth has played an important role at the Scottish family table for centuries. Hearty, flavorful and nutritious, traditional Scottish housewives were ever thrifty and knew how to make much of little. They new how to gather whatever fresh vegetables were available (typically some combination of leek, cabbage, carrots, rutabagas, turnips, and potatoes), add them together with lamb, mutton or beef and soup bones, throw in some barley, split peas and lentils (all staple Scottish ingredients) for extra bulk and nourishment, and simmer the mixture low and slow for hours to achieve a meal that by dinnertime would nourish both body and soul.

Come pull up a chair and enjoy a bowl of this quintessential Scottish stew!

This was among the very first recipes I ever published on my blog back in January 2013. It came by way of request from some of my very first readers who wrote in asking for "something Swedish that isn't meatballs". Kalops immediately came to mind, a very traditional beef stew with a unique flavor profile and so perfect for the cold weather. It is Swedish comfort food at its best!

I was introduced to PΓΆrkΓΆlt on my first trip to Hungary when I ordered it at a small hole-in-the-wall restaurant in Budapest. I loved it so much that I ordered it again the following evening. PΓΆrkΓΆlt is a prime example of how just a few simple ingredients prepared the right way can produce the most delicious flavor. Basic Hungarian PΓΆrkΓΆlt consists of onions sautΓ©ed in fat, meat, and paprika and slow-simmered in a little water...and the result is simply fabulous. This is a favorite in our home and I'm confident you'll love it as much as we do.
