| | This green goddess hummus, made with bright fresh herbs, is the perfect dip — special enough to make for friends, but simple and easy for everyday. We love to serve it on a grazing board with crackers and veggies, or use it in wraps, sandwiches and salads. | | SERVES: MAKES 1 BOWL TIME: 10 minutes INGREDIENTS 1 x 400g tin chickpeas drained & rinsed 1 lemon juiced 2 cloves garlic finely chopped 4 tablespoons tahini (use smooth, creamy tahini) 15g chives finely chopped 4 tablespoons flat-leaf parsley finely chopped 3 tablespoons fresh tarragon | | METHOD 1. Place all of the ingredients for the hummus into the bowl of a food processor and blitz until smooth and creamy. It can take a while to break down all of the herbs, so allow it to process for several minutes, stopping to scrape down the sides as needed. Add salt to taste.
2. Spread out in a shallow bowl, drizzle with olive oil, and sprinkle with chives, parsley and flaky sea salt, if you like. Serve with your favourite vegetables and crackers for dipping.
