Best Recipes For Using Summer Vegetables

One of my favorite things to do during the summer is to head to the farmers market and load up on as many vegetables as possible. Cucumbers, squash, zucchini, tomatoes, corn. I can't get enough of them. Here are some of my favrite recipes for turning garden fresh vegetables into delicious side dishes.


Marinated Cucumber, Tomato, and Onion Salad is the perfect summer salad. It's both sweet and tangy and the fresh crispness of the cucumbers and onions can't be beat.

Cheesy Squash, Zucchini, and Corn Casserole is a creamy, cheesy casserole full of summer vegetables. Lots of cheddar cheese and buttery cracker crumbs make this one heck of a side dish.

Marinated Cabbage and Sweet Pepper Slaw is tangy and sweet with lots of crunch. It's fairly mild in flavor and goes great with bbq pulled pork, burgers, or grilled chicken.

Tomato Cracker Salad is a simple southern dish that is a must for summer. Ripe summer tomatoes are combined with mayonnaise and crushed saltine crackers. This is a recipe that's been made throughout the south for many years.

Jalapeno Popper Grilled Corn salad is a creamy, chilled salad that has all the ingredients of a jalapeno popper. Fresh grilled summer corn, jalapenos, cream cheese, sour cream, mayonnaise, bacon, green onion and shredded cheddar cheese combine to make a wonderful summer side dish.

This quick Pickled Cucumbers and Onions recipe produces wonderfully crispy, crunchy pickles with plenty of tang.

This Grilled Corn and Butter Bean Salad is an amazing mixture of fresh summer vegetables. The ingredients are very similar to a traditional Succotash, but with a mayonnaise base, the taste is very different.

Summer Succotash is a wonderful southern side full of corn, lima beans, and bacon with lots of vibrant colors.

Lasagna Stuffed Zucchini Boats are a low-carb, gluten-free way to get your lasagna fix. Layers of rich tomato meat sauce and gooey cheese fill grilled zucchini.

Cucumber Coleslaw- This creamy, crunchy coleslaw is the perfect side for any summer meal.

Marinated Tomatoes are made with juicy, ripe tomatoes marinated in a red wine vinegar-based marinade. They are so delicious! Paired with fried chicken, burgers, or any summer meal, they make a healthy, tasty side.

Creamy Tomato and Cucumber Salad makes a fantastic summer side. Sliced tomatoes, cucumbers, and onions are tossed in a creamy dressing made from mayonnaise, sour cream, cider vinegar, and fresh dill.
