We're huge ice cream fans in our family and have been on a roll this summer making various flavors of homemade ice cream. Last week....

Set aside any pre-conceived notions you may have about eggplants - this moussaka will change your mind! I harvested my first eggplants of the season from our garden this week and am getting ready to make another batch of this delicious, traditional Greek dish.

This moussaka is one of the very first recipes I published on my blog (over 10 years ago, I can hardly believe it!). I had fun developing the recipe at the time and it has been a reader favorite ever since (just read the rave reviews in the comments section).

Seasoned ground meat is layered with sliced eggplants in a rich tomato-based sauce and baked with a luxuriously creamy layer of bechamel sauce on top. A very authentic moussaka but with a couple of twists to add even more depth of flavor. It's a labor of love but it can be made ahead and trust me, it's well worth the effort!
