There's an old recipe hiding in my website's archives, and it seriously needed a makeover. This is my new & improved creamy chicken pasta salad recipe, and it has even more buttermilk Greek yogurt dressing, more flavor, more zest, and more locked-in moisture. π½
Pasta salad can seem boring sometimes, but this one has the works (feta! corn! chicken! herbs!) and you can use nearly any vegetables you have on hand, or make it vegetarian. π₯π
I have extra success tips included now:
⭐ Save a little bit of dressing to stir into the pasta salad right before serving, so it tastes extra creamy and flavorful.
⭐ Make sure the pasta is still warm when mixing it all together.
⭐ I love using fusilloni or rotini pasta because the corkscrew shape holds onto a lot of dressing.
