Hi ,
This week, I didn't feel like turning on the oven—or even the grill.
It was just too hot.
No-Cook Meals for Hot Days
As we wrap up July and head into August, I think we could all use a few good no-cook recipes in our back pockets.
I'm talking about meals that are
- satisfying,
- flavorful,
- and fun
but don't require heating up the house (or sweating in the backyard).
Here are 5 of my favorites:
easy gazpacho
Put your summer tomatoes to work in this cold Spanish soup! Quick and easy to make in the blender, it's SO refreshing on a hot day.

fresh spring rolls
The creamy peanut dipping sauce takes them over the top.

mezze platter
I love serving this mezze platter in the summer because 1) all the components are cold and 2) you can make them all ahead. Just assemble when you're ready to eat!

caprese sandwiches
Thick slabs of fresh mozzarella, juicy tomato slices, aromatic basil... You can't beat this classic combo between bread.

black bean and corn salad
Make it on a Sunday, and keep it in the fridge for meals all week. The longer this zesty, protein-packed salad marinates, the better it tastes.

Stay cool, friends! xoxo, Jeanine
