Happy weekend, AK fam! ALL of the recipes for my upcoming cookbook are due in just a matter of weeks, so you know ya girl has been busy in the kitchen (testing 3-4 recipes each day!) This week's recipes are all meal prep worthy, so make a few for the week and enjoy nourishing meals each day! 5 recipes to cook this week Breakfast: JalapeΓ±o, Pepper Jack & Turkey Bacon Quiche with Potato Crust Ooo I love a good quiche for breakfast, lunch, or dinner. This one's packed with veggies and a lil' heat from pepper jack cheese and has an easy potato crust to keep it grain free. Lunch: Southwest Chicken Salad in a Jar Gimme all the fresh salads this season, especially when they're flavorful, protein-packed, and easy to make right in a meal prep jar! This one's loaded with crunchy veggies, juicy chicken, and the best homemade chipotle ranch dressing. Snack: Healthy Lemon Poppy Seed Bread I polled the AK IG audience on what spring recipes they wanted to see and so many people said lemon / lemon poppy seed! So do yourself a favor and make this gorgeous gluten free loaf (then check out all of my lemon recipes here). Dinner: Vegetarian Thai-Inspired Pineapple Forbidden Fried Rice I jazzed up vegetarian fried rice by using delicious forbidden rice (AKA black rice), rainbow veggies, and sweet pineapple for a super satisfying dinner that even meat eaters will love! Options to add meat proteins if you'd like. Dessert: Chewy Chocolate Chunk Coconut Oatmeal Cookies Just a damn good oatmeal chocolate chunk cookie with delicious coconut in every bite. These are an OG Ambitious Kitchen cookie and they're always a hit.
