Crispy Chinese Eggplant (page 106)
* Mr Wongs is a well known modern Asian restaurant here in Sydney. The crispy eggplant is one of their signature dishes. I've had it many times.... and I honestly prefer ours because it's crispier, stays crispy for far longer, and it's not as greasy.
