Happy Saturday!
I spent last night at a work dinner with Miguel and some of his co-workers, and tonight we're celebrating my grandpa's 90th (!!!) birthday with my extended family. Other weekend plans include: mood-boarding a patio (hopefully remodeling this fall) and of course grocery shopping.
I hope you have a fun, food-filled weekend!
Warm and luxurious Instant Pot Butter Chicken is an easy 30-minute meal. It's deliciously creamy and always a hit during weeknight dinners. This is one of my absolute favorite Indian dishes and so this really hits the spot when I'm craving Indian!
This crunchy Asian Chopped Salad is an easy way to get your veggies in! The recipe is made with cabbage, carrots and edamame and topped with a simple yet flavorful 6-ingredient honey sesame dressing. Such a simple recipe that's perfect for lunches or a quick weeknight dinner!
This easy Vegan Strawberry Shortcake has layers of vanilla sponge cake, strawberry sauce, and coconut whip in every bite. It's the best vegan dessert for spring and summer! There's just something about strawberry shortcake that screams spring or summer is here and I crave this every year around this time!
Single Serve Egg and Chickpea Breakfast
This Single Serve Chickpea Breakfast combines protein-packed chickpeas and eggs for a one-skillet, healthy breakfast recipe. It's such a tasty breakfast with such an easy cleanup!
Chicken Brussels Sprouts Salad
This Chicken Brussels Sprouts Salad is made with cooked chicken and brussels sprouts, a cilantro-avocado dressing and a couple poached eggs. It is an easy recipe that can be made ahead of time and eaten for lunch throughout the week!
This easy Mocha Smoothie recipe will quickly become your new go-to breakfast. It's made with healthy, wholesome ingredients like banana, yogurt and espresso, and it tastes amazing, too! Who doesn't love coffee and chocolate?
If you make any of these recipes, be sure to leave a comment and star rating on the blog and let me know what you think – I love hearing from you!
