I wanted to share this Healthy Banana Cream Pie with you all -- oh my is this so decadent and delicious! The custard is so tasty yet not super sweet and the banana flavor really comes through with each bite!

Healthy Banana Cream Pie
Ingredients:
9" frozen pie crust
Healthy Vanilla Custard:
¼ cup cornstarch or arrowroot powder
¼ cup sugar Pinch of salt
13.5 oz. coconut milk (1 can)
1 ¼ cups milk (any kind)
2 tsp vanilla extract
3-4 bananas
Frozen whipped cream
Directions:
- Thaw and bake the frozen pie crust according to the package instructions; allow it to cool.
- Make the healthy vanilla custard: In a medium saucepan, whisk the cornstarch, sugar, and salt. Slowly add in the coconut milk stirring constantly until there are no more clumps. Then add in the milk and vanilla extract and whisk once again.
- Put the pot over medium-high heat and whisk constantly until the mixture starts to form bubbles and starts to thicken and whisking becomes more difficult, about 5-7 minutes. Turn the heat down to medium-low and use a spatula to constantly stir scraping down the sides and bottom so nothing sticks to the saucepan. Keep stirring and repeating this process for about 7-10 minutes or until the custard resembles the texture of gravy.
- Once the pie crust is cooled, slice 2 large or 3 small bananas into ½ inch rounds and line the bottom and sides of the pie crust. Now pour the warm custard overtop of the bananas smoothing out into an even layer covering almost all of the bananas on the sides. Cover and place this in the fridge for at least 3 hours until the custard has set.
- Once the custard has set, spread the whipped cream over the top. Add additional sliced bananas for topping and serve. Enjoy right away, or store in the freezer until you're ready to serve.
