This is one of my favorite Chinese dishes to make when I'm pressed for time and need to get a meal on the table pronto. One of the things I love about it is that I can easily add additional veggies to it for more nutrition and variety: broccoli, cabbage, bell peppers, shredded collard greens, snow peas, bean sprouts....whatever I happen to have on hand.
