Treat yourself to a lazy brunch of hot fluffy pancakes topped with homemade apple cinnamon compote — simply irresistible. | |
| FOR THE APPLE COMPOTE 2 eating apples, peeled & cut into ½ " cubes 2 tbsp maple syrup (+ extra to serve) ½ tsp ground cinnamon FOR THE PANCAKES 7 oz self-raising flour 2 tbsp coconut sugar ½ tsp ground cinnamon 8.5 fl oz soya milk 2 tbsp melted coconut oil (+ more for cooking the pancakes) | | STEP ONE To make the apple compote, place the apples, maple syrup, cinnamon and 2 tablespoons of water into a saucepan over medium-high heat. Cover, bring to a gentle simmer and allow to cook for 15-20 minutes until softened. Mash roughly with a fork or potato masher. Remove from the heat and leave to cool. STEP TWO While the compote cooks, make the pancakes. Place the flour and coconut sugar into a large bowl, whisk to combine and remove any lumps. Pour in the soya milk and oil; whisk to combine, being careful not to overmix. STEP THREE Place a frying pan over medium-high heat and add a spoonful of coconut oil. Once melted, add spoonfuls of batter, about 3 tablespoons per pancake. Allow to cook for 3-4 minutes, until bubbles begin to appear on the surface, then flip over and cook for a further 3 minutes on the other side. STEP FOUR Serve topped with apple compote and a drizzle of maple syrup. | |
