| I love a vegan bolognese! I have a hearty mushroom and beet one on the site already, as well as an eggplant one in my cookbook. But this one only needs 30 minutes of cooking time and is way more pantry-friendly. It also comes together very simply on the stove. No pre-roasting or any funny business required.
Also, canned lentils make their TFM debut with this recipe! I don't use this ingredient very often because generally I find them to be a bit too soft. But in this luscious and meaty sauce, they get nice and silky with minimal time (along with a few other tricks). Ideal!
