| Hello reader I hope you had an indulgent and satisfying pancake day. It's one of those days that childhood memories of pancake tossing always fills me with excitement. And pancakes are a must. No pancake tossing for me this year though. I made crempogau, (Welsh pancakes) which sit very sedately in the pan as they rise. All that's needed is a quick flip with a spatula. They work well with both sweet and savoury toppings, so if you fancy giving them a go for St David's Day on the 1st of March, I highly recommend them. In anticipation, I made a super easy, but nevertheless rich and delicious chocolate sauce. Actually, that's not quite true. We had some leftover sparkling wine from Valentine's Day. I know, a bit of a clichรฉ, but I reckon it's the first time we've ever cracked open a bottle for just the two of us - ever! Anyway, I thought it woud be nice to make some Champagne truffles with it. I set to and all was going swimmingly until my ganache split - bah! I wanted to make the truffles really light with the chocolate and wine very much the stars of the show, so the only additional ingredient was a little sugar. I promptly gave up on the truffles and turned the sorry mess into a luxurious chocolate sauce. You can make the very same sauce with just water. I often do this and it's really good, but this was the first time I'd tried it with Champagne. Anyhow, it all turned out for the best as the sauce worked brilliantly with our pancakes. It also makes a mean hot chocolate. The horrid cold and cough is still lingering, but now the days are getting longer and the spring bulbs are emerging, I'm feeling SO much better.
