For such a simple recipe, it has restaurant-level flavor and maximum yum-factor making it one of my favorite dinners (and yes, I 100% hoard all the leftovers, if there are any, for myself).
➡️ Whenever I post a fish/seafood recipe, I always get asked if chicken can be subbed in for the fish. For this recipe, thin chicken tenders or pieces of chicken can likely sub in well for the salmon fillets (using the same cooking times in the recipe).

Additionally, if you find yourself worried, exhausted, confused, scared, and weary by the events happening in the US, you aren't alone. I've been so, so consumed by all of it (for months). I don't disengage well, especially when I feel strongly about issues, but I also don't intend to turn my food blog account or social media platform into another "political hot take."
For me personally, I have found a margin of peace in taking action where I can. I use the 5Calls app (and have for a long time) to call my reps in Congress. And we talk a lot as a family about the current events (and issues), what they mean, what we can do, and how to be discerning and wise.
I am also making bread this week and delivering several loaves to friends who are going through difficult things. While I know that may seem like it doesn't fix any of the big problems, it does help me feel like I am doing something in my own very tiny corner of the world.
