💥 Salty, briny, sweet, pepery, earthy!
The dressing for this one is fun to make. I have you heat the oil in a sauté pan before sizzling diced shallots, za'atar spice blend, and roughly chopped olives (I use Castelvetrano but any type works). The warm olive oil brings out the best in each ingredient. Right at the end, you add chickpeas, salt, pepper, and lemon juice.That mixture gets spooned over roasted sweet potatoes and peppery arugula before a shower of crumbled vegan feta finishes things off.
