Hi reader,
I grew up eating a lot of wild rice soup. ❤️ It's a family favorite and a winter essential.
The version my mom makes is special and delicious, but it also takes a while to make, so I wanted to come up with a version of it that could be easy enough to make on a weeknight.
This recipe has been on POY for many years. It's a top recipe in my home, and many of your homes, too. It has many 5-star reviews, but we also sometimes heard from people that it was a bit too thick - so I reworked the recipe just slightly and I'm happy to report that it's up to my current-day 5-star standards. ☺️
If you've never tried it, creamy, savory wild rice soup waiting for you when you walk in the door is truly some kind of magic. If you buy pre-chopped mirepoix (I get mine at Trader Joe's), the prep for this takes all of 5 minutes.
