Light tender flaky salmon, silky and savory peppers and garlic confit, big buttery chunks of avocado and roasty corn, salty bacon, and rivers of homemade smoky ranch. Have I said too much? This is a salad that I first had at a local restaurant, and decided I needed to be able to eat it anytime I wanted to. So here it is! The salad of my dreams.
If You Don't Like Salmon: This is also delicious with chicken! You could do some grilled chicken or this air-fried chicken would work great, too.
If You're Short On Time: Skip the pepper confit and just use fresh peppers, and/or use store-bought ranch (though… the smoked ranch is *really* good here).
If You Want To Prep This For Lunch: This works great for leftovers. The only things to really keep separate are the dressing and avocado, and the rest can be prepped in containers in advance!
