Good Morning Sweet Pea! What a grand day, don't you think so too? It's been so very hot this week and I've been grateful for my air conditioning. I bet you have too. I'm also thankful for another successful trip around the sun. Hallelujah. But enough of that, let's get on with the FOOD! I am so excited because in the coming week I have two absolutely NEW recipes to share with you. We LOVE them and I know you will too. But that will have to wait until next weeks newsletter. That said, if you keep an eye on the website (Loaves and Dishes) or the YouTube Channel (Here's the link), they will appear there first. But what can you fix that requires NO COOKING? That's a tall order, isn't it. Who wants to stand over a hot stove in the summer time? No one. That's who. Here's a few of my favorites to avoid turning on the oven thus keeping the kitchen fairly cool. Look to your other cooking devices (grill, crockpot, airfryer, etc.) for help with that. This Italian Summer Soup is FANTASTIC and it just involves a quick cook in the frying pan for the meat and then it all goes in the crockpot. These Crockpot Carnitas are also SO good! Give them a try for a delicious and hearty dinner that's ready when you walk in the door! Instant Pot Mississippi Chicken is delightful! Tasty! and FAST! OH SO GOOD! Try some cauliflower soup? It really is fantastic and on a hot day, it hits the spot! _________________________ HOT COOKING TIP OF THE WEEK It's the salad time of year so lets talk lettuce! - A pound of lettuce will feed about 6 people a salad. Now you know.
- To bring life back to slightly wilted lettuce, tear off any brown bits and then soak the leaves in cold water for several hours. You'll find that often the color and the crispness are restored in this way.
- To dry greens, spin in a salad spinner.
- To keep greens until ready to eat, pack loosely in a plastic bag with paper towels. They'll keep for about 2 days very well this way.
- When you are making a salad for a group, Use a large bowl and long utensils. Just before serving, place the greens into the bowl, drizzle a small amount of the dressing on and toss, then drizzle and toss, repeat until the lettuce is just coated in the dressing but not dripping in it. Sprinkle with salt and pepper and serve!
___________________________ THREE LITTLE THINGS I'm trying to be more thankful for the little things in life and sharing those things here. Maybe you'll find something that speaks to you. - That thing on facebook that reminds people that it's your birthday. Doesn't that make you feel loved when people say "Happy Birthday"? Wow.
- I'm thankful for these long sunny days. I need that sunlight so much.
- Thankful for people sharing information. Even though we are in the information age, if it weren't for folks who tell me about new things, I just probably wouldn't even know.
___________________________ A FINAL WORD As we move along this week I'm happy and thankful that things are starting to get back to normal. Hallelujah.
