Hello everybody! You know, in Italy they call ricotta gnocchi "fast food" - because it's so quick and easy to make. And in all honesty, I actually prefer these because they're softer and lighter so they don't weigh you down as much as the more well known potato gnocchi. Paired with a to-die-for creamy mushroom sauce, this is an excellent one for weekend cooking!
